Steamed veggies don't have to be boring. With a bit of butter and bold seasoning this side dish can be nuked in the microwave or on the stovetop steamer in just a few minutes. I like Citrus Rush with these because it gives the veggies a nice bright flavor.
Here's the before picture. Cubes of butter, a generous sprinkling of spice mix and a nice mix of colors make them much more attractive to even finicky eaters.
Citrus Rush Mixed Steamed Vegetables
2 cups broccoli florets
1/4 cup thinly sliced red onion
8 baby bella button mushrooms, quartered
1/2 red bell pepper, cut into short strips
1 tbsp Citrus Rush seasoning mix
1 tbsp butter
2 tbsp water
Salt and pepper to taste
Combine all ingredients in steamer basket and microwave or steam on stovetop for 3-4 minutes. Then salt and pepper to taste.
And here's the after picture. We like ours still a little crispy. My wimpy sister Ellen would add 2-3 minutes on the cooking time to get them soft and limp. I think they dropped her on her head as a kid but to each her own.
