Carolina Style Chicken WingsWhat you need:
Parted chicken wings
2 1/2 cups apple cider vinegar
1 Tbs Ketchup1 Tbs TBS
1 TBS Texas Pete or similar hot sauce to taste.
2 Tbs butter Zest Coast Carolina BBQ Rub Gallon plastic bag
What to do:
Combine 2 cups vinegar and 1 to 2 Tablespoon Carolina rub in plastic bag. Mix well. Add chicken wings and coat well. Let marinate in fridge 2 hours or overnight.Heat grill to 350 to 375. Cook over indirect heat for 30 to 60 minutes, turning once or twice.Cook to at least 165 degrees internal but I go to 200 degrees and like crispy skin.While wings are cooking, combine 1/2 cup vinegar, 1/2 TBS Carolina Rub, ketchup, butter and hot sauce in microwave safe cup. Stir and heat in microwave. I like to do this when first cooking wings and then reheat prior to serving.Place cooked wings in large bowl. Toss with sauce. Serve immediately, but also good cold. I like to add the sauce a little at a time so wings are lightly coated but not soggy.
Tip: Mix the sauce ingredients when prepping the wings. I use a small glass jar that can store the sauce and go in microwave.
