Inspired by this great blog post from Lorena at the Green Healthy Cooking website I had to test her contention that ALL recipes for Instant Pot rice are the same ratio of 1:1 water and rice. The only difference, she found, after weeks of testing ... is time! The instruction book that came with my IP doesn't say that. It calls for 3 cups of water for 2 cups of Basmati rice and 2.5 cups of water for brown rice. And the times are all over the place.
I decided to trust Lorena on this and use her method to make my Cilantro and Lime Brown Rice and sure enough, she was right. I used a 1:1 ratio of rice and 24 minutes of high pressure and natural release and it was perfect.
So hats off to Lorena for doing the hard work. Make sure you bookmark her site to have the right times for any rice you have on hand.
Some people think they don't like brown rice, so try this recipe if you have any holdouts.
I add some layers of flavor by using broth instead of water, a bit of butter and some Zest Coast Citrus Rush at the start. Then add fresh lime juice and cilantro to wake up the flavors. It goes great with anything off the grill and is especially good with fish. We served it with Cedar Plank Salmon and broccoli and had not one bite leftover. Note that if you aren't a brown rice fan, you can use this same method to dress up white or jasmine rice with lime and cilantro.
Instant Pot Cilantro and Lime Brown Rice
2 cups broth (or use water and bullion cubes)
2 cups brown rice
1 tbsp Zest Coast Citrus Rush
1 tbsp butter
1 lime, juiced
1 teaspoon lime zest
1/2 cup chopped fresh cilantro
Add water, rice, butter and Zest Coast seasoning to Instant Pot and cook it on high pressure for 24 minutes and let the steam release naturally. When the rice is done, stir in the juice of one lime, zest and fresh cilantro. Adjust seasoning to taste or add more lime if you like.
